Ingredients

Scale
  • 1 lb beef sirloin, thinly sliced
  • 8 oz fresh mushrooms, sliced
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup full-fat sour cream
  • 1 cup low-sodium beef broth
  • 2 tbsp all-purpose flour
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Slice the beef sirloin into thin strips. Chop the onion and mince the garlic for easy cooking.
  2. In a large skillet over medium-high heat, heat olive oil. Add sliced beef in batches; sear until browned (about 3 minutes per batch). Remove and set aside.
  3. In the same skillet, add chopped onions and sliced mushrooms. Sauté until soft and golden (about 5 minutes). Add minced garlic during the last minute.
  4. Sprinkle flour over the mushroom mixture while stirring for about one minute. Gradually pour in beef broth while whisking to prevent lumps. Simmer for about 3 minutes until slightly thickened.
  5. Reduce heat to low and mix in sour cream until smooth. Return cooked beef along with any juices. Season with salt and pepper.
  6. Plate your quick beef stroganoff over egg noodles or rice, garnishing with fresh parsley if desired.
