Instructions

  1. Preheat oven to 350°F (175°C). Grease two round cake pans and line with parchment paper.
  2. In a large bowl, sift together flour, sugar, baking soda, cocoa powder, and salt.
  3. In another bowl, whisk vegetable oil, buttermilk, eggs, red food coloring, vanilla extract, and vinegar until smooth.
  4. Gradually mix dry ingredients into wet ingredients until just combined.
  5. Divide batter between prepared pans and bake for 25-30 minutes or until a toothpick comes out clean.
  6. Cool cakes on wire racks before frosting.
  7. For frosting, beat cream cheese until smooth; gradually add powdered sugar and vanilla until creamy.
  8. Assemble by spreading frosting between layers and on top of the cake.
