Ingredients

Scale
  • 4 cups all-purpose flour
  • 1/4 cup unsweetened cocoa powder
  • 1/2 cup granulated sugar
  • 2 teaspoons baking powder
  • 2 1/4 teaspoons active dry yeast (1 packet)
  • 1 cup buttermilk, warmed
  • 2 large eggs
  • 1/4 cup unsalted butter, melted
  • 1/2 cup brown sugar, packed
  • 2 tablespoons ground cinnamon
  • 1/4 cup unsalted butter, melted
  • 8 oz full-fat cream cheese, softened
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. 1. Prepare the Dough: Activate yeast by mixing warm buttermilk, sugar, and yeast; let sit until frothy (about 5 minutes). In a bowl, combine flour, cocoa powder, baking powder, and salt.
  2. 2. Mix Wet Ingredients: Whisk together melted butter, eggs, and yeast mixture. Combine with dry ingredients until smooth; knead for about 5 minutes.
  3. 3. Let It Rise: Place dough in an oiled bowl; cover and let rise in a warm spot until doubled in size (about 1 hour).
  4. 4. Make the Filling: Mix brown sugar and cinnamon in a bowl. Roll out dough into a rectangle about half an inch thick; spread melted butter over it and sprinkle with cinnamon-sugar mix.
  5. 5. Roll Up Tight: Roll dough tightly from one long side and cut into equal pieces (about twelve). Place cut-side up in a greased baking pan.
  6. 6. Bake & Frost: Let rise until puffy (30 minutes). Preheat oven to 375°F (190°C) and bake rolls until golden brown (about 25 minutes). Beat together frosting ingredients until smooth and spread over warm rolls.
