  • 1 lb baby potatoes, halved
  • 8 oz fresh green beans, trimmed
  • 6 cloves garlic, whole
  • 3 tbsp extra virgin olive oil
  • 1 tsp kosher salt
  • 1/2 tsp freshly cracked black pepper

Instructions

  1. Preheat oven to 425°F (220°C).
  2. Wrap garlic cloves in foil with a drizzle of olive oil and roast for 20 minutes.
  3. In a bowl, toss halved baby potatoes with olive oil, salt, pepper, and mashed roasted garlic.
  4. Spread potatoes on a baking sheet and roast for 25 minutes until golden brown.
  5. Add green beans on top of the potatoes and roast for an additional 10-15 minutes until beans are tender-crisp.
