  • 1 lb baby potatoes (about 450g)
  • 8 oz block feta cheese
  • 3 tbsp extra virgin olive oil
  • 2 tsp fresh thyme or rosemary
  • 3 cloves garlic, minced
  • 1 tsp salt
  • ½ tsp black pepper
  • Zest of 1 lemon

Instructions

  1. Preheat oven to 400°F (200°C) and lightly spray a baking dish with nonstick cooking spray.
  2. Wash and halve the baby potatoes, then toss them in a bowl with olive oil, salt, pepper, minced garlic, and herbs until well coated.
