  • 8 oz dark chocolate (60% cocoa), chopped
  • 1/2 cup heavy cream
  • 4 tbsp unsalted butter
  • 1/2 cup granulated sugar
  • 1/4 tsp coarse sea salt
  • 1 tsp vanilla extract
  • Cocoa powder for dusting

Instructions

  1. Prepare your workstation with all ingredients and tools.
  2. In a saucepan over medium-low heat, melt the sugar until golden brown, stirring constantly. Add heavy cream and butter; stir until smooth.
  3. Remove from heat and mix in vanilla extract and sea salt. Let cool slightly.
  4. Pour hot caramel over chopped chocolate in a bowl; let it sit for 5 minutes before stirring until smooth.
  5. Cover and refrigerate for about 2 hours or until firm.
  6. Scoop out chilled ganache and roll into balls; dust with cocoa powder.
