  • 8 oz cream cheese, softened
  • 1 cup powdered sugar
  • 1 tsp pure vanilla extract
  • 1 box (15.25 oz) red velvet cake mix
  • 1 cup water (for cake mix)
  • 1 cup whipped cream (store-bought or homemade)
  • 6 fresh strawberries

Instructions

  1. Preheat oven to 350°F (175°C). Prepare red velvet cake mix according to package instructions; pour into mini cupcake liners and bake for about 15 minutes until a toothpick comes out clean. Let cool.
  2. In a mixing bowl, beat together softened cream cheese, powdered sugar, and vanilla extract until smooth.
  3. Once the red velvet bases have cooled, remove them from the liners and pipe or spoon cheesecake filling on top of each.
  4. Cut tops off strawberries to resemble hats and place one on each cheesecake bite.
  5. Pipe whipped cream around the base of each strawberry hat.
  6. Chill in the refrigerator for at least one hour before serving.
