  • 1 packet (1 oz) onion soup mix
  • 1/2 cup plain breadcrumbs
  • 1 large egg
  • 1 cup shredded Gruyère cheese (divided)
  • 1 tbsp chopped fresh parsley
  • 1 cup low-sodium beef broth
  • 1 tbsp balsamic vinegar
  • 1 tbsp low-sodium soy sauce

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a large bowl, mix together ground beef, onion soup mix, breadcrumbs, egg, and half of the Gruyère cheese until combined.
  3. Form the mixture into golf ball-sized meatballs and place them on a parchment-lined baking sheet.
  4. Bake for 20 minutes until browned and cooked through.
  5. While baking, combine beef broth, balsamic vinegar, soy sauce, and remaining Gruyère cheese in a saucepan over medium heat until bubbly.
  6. Add cooked meatballs to the sauce and let them soak up the flavors before serving.
