  • 2 ripe avocados, diced
  • 1 cup cherry tomatoes, halved

  • Salt and pepper to taste

Instructions

  1. Rinse shrimp under cold water; thaw if frozen. In a skillet over medium heat, sauté shrimp in olive oil until pink and opaque (3-5 minutes).
  2. While the shrimp cools, chop cherry tomatoes and dice avocados. Finely chop cilantro.
  3. In a small bowl, whisk together lime juice, minced garlic, olive oil, salt, and pepper.
  4. In a large bowl, combine cooked shrimp, diced avocado, halved tomatoes, and cilantro. Drizzle with dressing and toss gently.
  5. Taste and adjust seasoning if needed before serving immediately.
