Instructions

  1. In a medium skillet over medium heat, add olive oil. Once hot, sauté shrimp until pink and opaque, about 3-4 minutes. Season with salt and pepper.
  2. In a bowl, whisk together eggs and milk until frothy.
  3. Remove shrimp from the skillet. Pour egg mixture into the same skillet and let it set for about two minutes until edges firm up.
  4. Add cooked shrimp, green onions, and cheese on one half of the omelette.
  5. Cook for another minute until the center is set but slightly soft.
  6. Fold omelette carefully and slide onto a plate. Garnish with additional green onions if desired.
