  • 1 cup unsalted butter (room temperature)
  • 1 cup granulated sugar
  • 4 large eggs
  • 1 cup mixed dried fruit (sultanas, raisins, currants)
  • 2 tsp mixed spice powder
  • 8 oz marzipan

Instructions

  1. Preheat the oven to 325°F (160°C). Grease or line a round cake pan with parchment paper.
  2. In a large bowl, cream together the unsalted butter and sugar until light and fluffy. Beat in the eggs one at a time.
  3. Gradually add the flour mixed with baking powder and mixed spice powder.
  4. Gently fold in the dried fruits, ensuring even distribution without overmixing.
  5. Pour the batter into the prepared pan and bake for about 60 minutes or until a toothpick comes out clean.
  6. Allow the cake to cool completely before removing it from the pan. Roll out marzipan to fit on top of the cake, then decorate with eleven small marzipan balls around the edge.
