  • 1 tsp baking soda

  • 3/4 cup unsalted butter, softened
  • 1 cup brown sugar, packed
  • 1/2 cup granulated sugar (for rolling)
  • 1/4 cup molasses
  • 1 large egg

Instructions

  1. 1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. 2. In a bowl, whisk together flour, ground ginger, cinnamon, baking soda, and salt; set aside.
  3. 3. In another bowl, cream softened butter with brown sugar until light and fluffy. Add the egg and molasses; mix until combined.
  4. 4. Gradually add the dry ingredients to the wet mixture until just combined.
  5. 5. Scoop tablespoons of dough onto prepared sheets, rolling them in granulated sugar before placing them on the sheet.
  6. 6. Bake for 10–12 minutes until edges are set but centers remain soft. Cool slightly before serving.
