  • 1/2 cup unsalted butter (melted)

Instructions

  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Whisk together flour, baking powder, cinnamon, cardamom, and salt in a medium bowl; set aside.
  3. In another bowl, beat eggs and granulated sugar until fluffy. Add pumpkin puree and melted butter; mix until smooth.
  4. Gradually fold dry ingredients into the wet mixture until just combined.
  5. Spread batter evenly on the prepared baking sheet and bake for 15–20 minutes until lightly golden.
  6. While the cake cools, mix melted butter with mascarpone cheese and brown sugar until creamy.
  7. Once cooled completely, spread filling over the cake, roll it tightly, dust with powdered sugar, slice, and serve.
