  • 3 boneless, skinless chicken breasts (about 1.5 lbs)
  • 2 tbsp Cajun seasoning
  • 8 oz linguine pasta
  • 1 cup heavy cream
  • 3 cloves garlic, minced
  • 1 cup bell peppers, sliced (red or green)
  • ½ cup grated Parmesan cheese
  • 2 tbsp olive oil

Instructions

  1. Cook the linguine in a large pot of salted boiling water until al dente. Reserve some pasta water before draining.
  2. Season both sides of the chicken breasts with Cajun seasoning.
  3. Heat olive oil in a large skillet over medium-high heat. Add the seasoned chicken and cook for 6-7 minutes per side until golden brown and cooked through. Remove from skillet and let rest.
  4. In the same skillet, sauté minced garlic and sliced bell peppers for about 3-4 minutes until softened.
  5. Pour in heavy cream, stirring well to combine.
  6. Slice the cooked chicken into bite-sized pieces and return to the skillet along with drained linguine. Toss everything together, adding reserved pasta water as needed for desired sauce consistency.
  7. Serve hot, garnished with grated Parmesan cheese.
