  1. Wash and peel the daikon radish. Slice it into thin matchsticks or rounds.

  3. Add the sliced radish to the brine mixture ensuring they are submerged.
  4. Cover with plastic wrap or transfer to an airtight jar. Marinate in the fridge for at least 1 hour (overnight for best flavor).
