Ingredients

Scale
  • 2 1/4 tsp active dry yeast
  • 1 cup warm water (110°F)
  • 3 cups all-purpose flour
  • 1 tbsp granulated sugar
  • 1 tsp salt
  • 1 lb lean ground pork
  • 1 tsp paprika
  • 1/2 tsp cayenne pepper (adjust to taste)
  • 1 tbsp baking soda
  • 1 egg (for egg wash)

Instructions

  1. In a bowl, combine warm water, sugar, and yeast; let sit for about 5 minutes until frothy.
  2. In a large bowl, whisk together flour and salt. Create a well in the center and add the yeast mixture. Mix until combined; knead for about 5 minutes until smooth.
  3. For the filling, mix ground pork with paprika, cayenne pepper, and salt in another bowl.
  4. Let the dough rise in a warm spot for 1 hour until doubled. Punch down and divide into equal pieces. Roll into ropes, fill with pork, and shape into pretzels.
  5. Boil water in a pot; add baking soda carefully. Boil each pretzel for about 30 seconds per side before placing on a parchment-lined baking sheet.
  6. Preheat oven to 425°F. Brush pretzels with egg wash and bake for 12-15 minutes until golden brown.
