  • 9 lasagna noodles
  • 2 cups fresh spinach, chopped
  • 1 cup mushrooms, sliced
  • 1 medium zucchini, thinly sliced
  • 1 cup bell peppers (mixed red and yellow), chopped
  • 15 oz ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 2 cups spicy marinara sauce

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet over medium heat, sauté mushrooms and bell peppers until softened (about 5 minutes). Stir in spinach and zucchini until wilted.
  3. In a bowl, mix ricotta cheese with salt, pepper, and Italian seasoning. Optionally add one egg for creaminess.
  4. In a baking dish, spread a layer of marinara sauce. Layer with noodles, half the ricotta mixture, half the sautéed vegetables, another layer of marinara sauce, and mozzarella cheese. Repeat layers until ingredients are used up.
  5. Cover with foil and bake for 25 minutes. Remove foil and bake for an additional 15-20 minutes until bubbly and golden.
  6. Allow to rest for 10 minutes before serving.
