Spinach Cheese Stuffed Portobello mushrooms are a delightful and vibrant dish that promises to elevate any meal.   • 4 large Portobello mushrooms
  • 2 cups fresh baby spinach
  • 8 oz cream cheese (softened)
  • 1 cup shredded mozzarella cheese
  • 3 cloves garlic (minced)
  • 1/2 cup grated Parmesan cheese
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Clean the portobello mushrooms with a damp cloth and remove the stems and gills.
  3. In a pan over medium heat, add olive oil and sauté minced garlic until fragrant. Add spinach and cook until wilted (approximately 3 minutes).
  4. In a bowl, mix cream cheese, mozzarella, sautéed spinach, Parmesan, salt, and pepper.
  5. Generously stuff each portobello cap with the filling and drizzle with olive oil.
  6. Place on a baking sheet and bake for about 25 minutes or until golden brown. Serve warm.
