Spinach Feta Quesadilla is the perfect quick meal that combines the freshness of spinach with the tanginess of feta, all encased in a crispy tortilla.   • 2 medium flour tortillas
  • 1 cup fresh baby spinach, washed and dried
  • 1/2 cup crumbled feta cheese
  • 1/2 cup shredded mozzarella cheese
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Prepare the spinach by washing and drying it thoroughly.
  2. Crumble the feta cheese into small pieces.
  3. Heat olive oil in a skillet over medium heat.
  4. Place one tortilla in the skillet, add mozzarella cheese on one half, then layer with spinach and crumbled feta. Season with salt and pepper.
  5. Fold the tortilla and cook for 3-4 minutes until golden brown. Flip and cook for another 3 minutes.
  6. Remove from heat, cool slightly, cut into wedges, and serve warm with salsa or guacamole.
