  • 2 cups fresh spinach, chopped
  • 3 cloves garlic, minced
  • 1 cup breadcrumbs (plain or Italian)
  • 1 cup fresh mozzarella cheese, cubed
  • ½ cup grated Parmesan cheese
  • 1 large egg
  • 2 tsp Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C) and prepare a baking dish with nonstick spray.
  2. Sauté the chopped spinach in olive oil until wilted, about 3 minutes.
  3. In a large bowl, mix ground beef, sautéed spinach, minced garlic, breadcrumbs, Parmesan cheese, egg, Italian seasoning, salt, and pepper until just combined.
  4. Shape the mixture into golf ball-sized meatballs and place them in the baking dish.
  5. Top each meatball with cubed mozzarella cheese.
  6. Bake for 20-25 minutes or until golden brown and cooked through.
