  • 1 package (17.3 oz) frozen puff pastry, thawed
  • 2 cups fresh spinach, chopped (or 1 cup frozen spinach, thawed)
  • 4 oz cream cheese, softened
  • 4 oz crumbled feta cheese
  • 2 cloves garlic, minced
  • 1 medium onion, finely chopped
  • 1 egg, beaten (for egg wash)
  • 2 tbsp olive oil

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Heat olive oil in a skillet over medium heat. Add chopped onions and minced garlic; sauté until translucent (about 3 minutes).
  3. Stir in the spinach and cook until wilted if using fresh; squeeze excess moisture from thawed frozen spinach.
  4. In a bowl, combine the sautéed mixture with cream cheese and crumbled feta; mix until well combined.
  5. Roll out the puff pastry on a floured surface, cut into squares or circles, and add a spoonful of filling in the center of each.
  6. Fold over the corners to seal, brush with beaten egg for shine, and bake for 20-25 minutes until golden brown.
