  • 3 tbsp low-sodium soy sauce
  • 2 tbsp brown sugar
  • 1 tbsp cornstarch
  • 1 tsp sesame oil
  • 2 green onions, chopped (for garnish)
  • Salt (to taste)
  • Water (as needed for sauce)

Instructions

  1. Prepare the Eggplant: Slice the eggplant and sprinkle with salt. Let sit in a colander for 30 minutes to draw out moisture and bitterness.
  2. Rinse and Dry: Rinse the salted eggplant under cold water and pat dry with paper towels.
  3. Sauté the Garlic: Heat a tablespoon of oil in a skillet over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
  4. Cook the Eggplant: Add the eggplant to the skillet and stir-fry for about 5 minutes until slightly softened.
  5. Make It Sticky: In a bowl, mix soy sauce, brown sugar, cornstarch, sesame oil, and a splash of water. Pour over eggplants and stir to coat. Simmer for another 5 minutes until thickened.
  6. Serve: Transfer to plates and garnish with green onions.
