  • 1 cup fresh strawberries, chopped
  • 8 oz cream cheese, softened
  • 1 cup powdered sugar
  • 1 tsp vanilla extract
  • 1/2 cup graham cracker crumbs
  • 1 cup white chocolate chips

Instructions

  1. Prepare the strawberries by washing, hulling, and chopping them. Drain excess moisture with a paper towel.
  2. In a mixing bowl, blend softened cream cheese, powdered sugar, vanilla extract, and half of the chopped strawberries until smooth.
  3. Scoop tablespoon-sized portions of the mixture and roll into balls. Place on a parchment-lined baking sheet.
  4. Chill the truffles in the refrigerator for about 1 hour to firm up.
  5. Melt white chocolate chips in short bursts until smooth. Dip each chilled truffle in melted chocolate and return to the baking sheet.
  6. While still wet, sprinkle with remaining graham cracker crumbs and chill again until set.
