  • 2 medium acorn squashes
  • 1 lb ground turkey or sausage
  • 1 medium onion, finely chopped
  • 3 garlic cloves, minced
  • 2 cups fresh spinach or kale, wilted
  • ½ cup feta or mozzarella cheese, shredded
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp cumin
  • 1 tsp paprika
  • 2 tbsp olive oil

Instructions

  1. Preheat the oven to 400°F (200°C) and lightly grease a baking dish.
  2. Halve the acorn squashes lengthwise and scoop out the seeds. Drizzle with olive oil and season with salt and pepper. Place cut-side down in the baking dish.
  3. Roast for 25-30 minutes until tender.
  4. In a skillet over medium heat, cook the ground turkey or sausage with chopped onion and minced garlic until browned.
  5. Stir in wilted greens and seasonings until well combined.
  6. Fill each roasted squash half with the mixture, top with cheese, and bake for another 10-15 minutes until bubbly.
