  • 2 medium sweet potatoes (about 500g), peeled and diced
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 cup bell peppers (about 150g), diced (mix of red and yellow)
  • 1 small red onion (about 70g), diced
  • 3 cloves garlic, minced
  • 2 tbsp extra virgin olive oil
  • 1 tsp cumin
  • 1 tsp paprika
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Toss diced sweet potatoes with olive oil, cumin, paprika, salt, and pepper in a mixing bowl until evenly coated.
  3. Spread seasoned sweet potatoes on a parchment-lined baking sheet and roast for about 20 minutes until tender.
  4. While roasting, prepare the bell peppers, red onion, and garlic.
  5. After 20 minutes, add bell peppers, red onion, and garlic to the baking sheet. Stir well and return to the oven for another 10-15 minutes until golden brown.
  6. Remove from the oven and gently fold in black beans. Return to the oven for an additional five minutes to warm through.
  7. Serve hot, optionally topped with avocado slices or poached eggs.
