  1. Preheat your oven to 400°F (200°C).
  2. Wash and peel the sweet potatoes, then slice them into rounds about ½ inch thick.
  3. Toss the sweet potato slices in a large bowl with olive oil, salt, and pepper until evenly coated.
  4. Arrange the rounds on a parchment-lined baking sheet and bake for about 20 minutes or until tender.
  5. Remove from the oven, sprinkle crumbled blue cheese and cranberries over each round, and return to the oven for an additional 5 minutes until the cheese is slightly melted.
