  • 4 Italian sausages (sweet or spicy)
  • 4 sub rolls
  • 1 cup shredded mozzarella cheese
  • 1 cup mixed bell peppers (red, yellow, green), chopped
  • 1 medium onion, chopped
  • 2 tsp olive oil

Instructions

  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a skillet over medium heat, add olive oil and cook the sausages for 8-10 minutes until browned, turning occasionally.
  3. Remove sausages and sauté chopped bell peppers and onions in the same skillet for about 5 minutes until soft.
  4. Slice each sub roll down the middle without cutting through to create pockets for filling.
  5. Cut sausages into bite-sized pieces and fill each roll with sausage pieces and sautéed veggies. Top with mozzarella cheese.
  6. Bake in the oven for 10-12 minutes until cheese is bubbly and golden brown.
