  • 1 lb ground chicken
  • 1 tbsp fresh ginger, grated
  • 3 cloves garlic, minced
  • 4 green onions, finely chopped
  • 2 tbsp Thai red curry paste
  • 1 cup coconut milk
  • 2 tbsp lime juice

Instructions

  1. Preheat your oven to 400°F (200°C) and spray a baking dish with nonstick cooking spray.
  2. In a large bowl, combine ground chicken, ginger, garlic, green onions, and curry paste. Mix well with your hands.
  3. With wet hands, form the mixture into golf-ball-sized meatballs and place them in the baking dish.
  4. Bake for 20-25 minutes until golden brown and cooked through (internal temperature of at least 165°F).
  5. In a saucepan over medium heat, warm coconut milk and lime juice until slightly thickened.
  6. Serve the meatballs drizzled with the coconut-lime sauce and garnish with additional green onions.
