  • 2 cups chicken broth or vegetable broth
  • 1 cup cooked chicken or tofu, cubed
  • 1 tablespoon fresh ginger, minced
  • 2 stalks lemongrass, bruised
  • 2 tablespoons Thai red curry paste (adjust to taste)
  • Juice of 1 lime
  • 2 tablespoons fresh cilantro, chopped (for garnish)
  • Sliced chili peppers (for garnish)

Instructions

  1. Prepare your ingredients by chopping the chicken or tofu into bite-sized pieces and mincing garlic and ginger.
  2. In a large pot over medium heat, add a splash of oil and sauté minced garlic and ginger for about one minute until fragrant.
  3. Add the chicken or tofu to the pot; cook until lightly browned (about five minutes). Stir in the red curry paste for one more minute.
  4. Pour in the coconut milk and broth; stir well and bring to a gentle simmer.
  5. Add bruised lemongrass and lime juice; let it simmer for ten minutes to infuse flavors.
  6. Remove lemongrass before serving; ladle soup into bowls and garnish with cilantro and sliced chili peppers.
