  • 2 cups low-sodium vegetable broth

  • 1 celery stalk, chopped

  • ½ cup dried cranberries
  • ½ cup pecans or walnuts, toasted
  • 2 tablespoons olive oil
  • 1 tablespoon fresh thyme, chopped
  • 1 tablespoon fresh parsley, chopped
  • Salt and pepper to taste

Instructions

  1. Rinse the wild rice under cold water to remove excess starch.
  2. In a large skillet, heat the olive oil over medium heat. Add the onion, celery, and carrot; sauté for about 5 minutes until softened.
  3. Pour in the vegetable broth and add the rinsed wild rice. Bring to a boil, then reduce heat to low, cover, and simmer for 45 minutes until the rice is tender.
  4. Stir in the dried cranberries and toasted nuts until well combined.
  5. Remove from heat and mix in fresh herbs. Season with salt and pepper as desired.
  6. Serve warm as a side dish or main course.
