  • 3 boneless, skinless chicken breasts (about 1.5 lbs)
  • 2 cups fresh basil leaves
  • 4 ripe tomatoes, diced
  • 8 oz spaghetti or linguine
  • 1/4 cup balsamic vinegar
  • 2 tbsp extra virgin olive oil
  • 4 cloves garlic, minced
  • Salt and pepper to taste
  • 1/2 cup freshly grated Parmesan cheese

Instructions

  1. 1. Marinate the chicken by mixing balsamic vinegar, olive oil, garlic, salt, and pepper in a bowl. Coat the chicken breasts well and let them marinate for at least 30 minutes.
  2. 2. Cook the pasta in a large pot of salted boiling water according to package instructions until al dente. Drain and reserve 1/2 cup of pasta water.
  3. 3. Grill the marinated chicken on medium-high heat for about 6-7 minutes per side until fully cooked (internal temperature should be 165°F). Allow it to rest before slicing.

  5. 5. Add the cooked pasta to the skillet with sauce; use the reserved pasta water as needed to achieve a silky texture. Toss gently to coat everything evenly.
