  • 1 lb lean ground turkey
  • 1 cup canned pumpkin puree
  • 1 can (15 oz) black beans, rinsed
  • 1 can (14.5 oz) fire-roasted diced tomatoes
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 2 tbsp chili powder
  • 1 tsp cumin
  • Salt and pepper to taste

Instructions

  1. Heat a large pot over medium heat. Add oil and sauté chopped onions for about five minutes until soft. Add minced garlic and cook for one more minute.
  2. Add ground turkey, breaking it apart with a spatula. Cook until no longer pink, about six to seven minutes. Season with salt and pepper.
  3. Stir in pumpkin puree, chili powder, cumin, and other desired spices; cook for two minutes.
  4. Mix in black beans and diced tomatoes. Simmer on low heat for twenty minutes.
  5. Taste and adjust seasoning if necessary before serving hot.
