  • 200g fresh ramen noodles
  • 3 tablespoons white or yellow miso paste
  • 960ml vegetable broth
  • 1 medium carrot, thinly sliced
  • 100g fresh spinach
  • 2 green onions, chopped
  • 150g firm tofu (optional), cubed

Instructions

  1. In a large pot over medium heat, combine vegetable broth and miso paste. Stir until the miso dissolves.
  2. Add sliced carrots to the pot and simmer for about five minutes until tender but still slightly crunchy.
  3. Cook ramen noodles according to package instructions. Drain and set aside.
  4. Stir in fresh spinach until wilted, then add cubed tofu if using.
  5. Divide cooked noodles into serving bowls and ladle the broth with vegetables over them.
  6. Garnish with chopped green onions and serve immediately.
