  • 8 oz fresh tortellini (cheese or spinach-filled)
  • 1 cup cherry tomatoes, halved
  • 2 cups fresh baby spinach
  • 4 tbsp high-quality balsamic vinegar
  • 2 tbsp extra virgin olive oil
  • 2 garlic cloves, minced

Instructions

  1. Cook the tortellini in salted boiling water according to package instructions (3-5 minutes). Drain and set aside.
  2. In a skillet over medium-high heat, add olive oil. Season chicken with salt and pepper, then sauté for 6-7 minutes on each side until cooked through. Remove from skillet and let rest before slicing.
  3. In the same skillet, add minced garlic and sauté until fragrant (about 1 minute).
  4. Return sliced chicken to the skillet; add cherry tomatoes and spinach. Stir until spinach wilts (about 3 minutes).
  5. Drizzle balsamic vinegar over the mixture and stir to combine.
