  • 3 cups cooked, shredded boneless skinless chicken breasts
  • 1 cup cream of chicken soup
  • 1 cup sour cream
  • 1 (4 oz) can green chiles
  • 2 cups shredded Monterey Jack cheese
  • 8 large flour tortillas
  • 2 cloves fresh garlic, minced

Instructions

  1. Preheat oven to 350°F (175°C). Spray a baking dish with nonstick cooking spray.
  2. Cook chicken in boiling water for about 15-20 minutes until fully cooked. Shred with two forks.
  3. In a bowl, mix shredded chicken, cream of chicken soup, sour cream, green chiles, and half of the cheese.
  4. Spoon filling onto each tortilla and roll them up tightly. Place seam-side down in the baking dish.
  5. Pour any remaining sauce over enchiladas and top with remaining cheese.
  6. Bake uncovered for 25-30 minutes until bubbly and golden brown.
