  • 1 cup all-purpose flour (120g)
  • 2 large eggs
  • 1/2 cup grated Parmesan cheese (50g)
  • 1/4 cup chopped green onions
  • 1 tsp salt

  • 2 tbsp olive oil

Instructions

  1. Grate the zucchinis and place them in a clean kitchen towel. Squeeze out excess moisture to avoid soggy fritters.
  2. In a large bowl, combine the drained zucchini, flour, eggs, Parmesan cheese, green onions, salt, and pepper. Mix until well combined.
  3. Heat olive oil in a skillet over medium heat until hot.
  4. Drop spoonfuls of batter into the skillet and flatten slightly. Fry for about 3 minutes on each side or until golden brown.
