  • 1 cup granulated sugar
  • 1 ½ tsp baking powder

  • ½ cup unsalted butter, softened
  • 2 large eggs, at room temperature
  • 1 tsp vanilla extract
  • ½ tsp almond extract
  • ¾ cup powdered sugar (for frosting)
  • Blue food coloring (to desired hue)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a cupcake pan with liners.
  2. In a bowl, whisk together flour, baking powder, and salt.
  3. In another bowl, cream butter and sugar until fluffy. Add eggs one at a time, mixing well after each addition. Stir in vanilla and almond extracts.
  4. Gradually mix dry ingredients into the wet mixture until just combined.
  5. Fill cupcake liners two-thirds full and bake for 18-20 minutes or until a toothpick comes out clean. Allow to cool completely.
  6. For the frosting, beat powdered sugar with softened butter and blue food coloring until smooth. Frost cooled cupcakes as desired.
