  • 8 oz spaghetti or penne pasta
  • 2 cups ripe tomatoes, chopped (about 4 medium tomatoes)
  • 1 cup fresh basil leaves, torn
  • 3 cloves garlic, minced
  • 3 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Boil a large pot of salted water. Add pasta and cook according to package instructions until al dente (about 8-10 minutes).
  2. In a skillet over medium heat, warm olive oil and sauté minced garlic for about 30 seconds until fragrant.
  3. Add chopped tomatoes to the skillet and cook for about 5 minutes until they soften and release juices.
  4. Drain the pasta, reserving some cooking water. Combine the pasta with the tomato mixture in the skillet.
  5. Toss in fresh basil and season with salt and pepper. If needed, add reserved pasta water for desired consistency.
