  • 1 cup quinoa
  • 3 cups water
  • 1 cup cherry tomatoes, halved
  • 1 medium cucumber, diced
  • ½ cup crumbled feta cheese
  • ½ cup fresh parsley, chopped
  • ¼ cup fresh mint, chopped
  • 3 tbsp extra virgin olive oil
  • Juice of 1 lemon
  • Salt and pepper to taste

Instructions

  1. Rinse quinoa under cold water. Combine with water in a saucepan; bring to a boil. Reduce heat to low, cover, and simmer for about 15 minutes or until liquid is absorbed. Fluff with a fork.
  2. While cooking, chop cucumber and halve cherry tomatoes.
  3. In a large bowl, combine cooked quinoa with parsley and mint.
  4. Gently fold in cucumber, tomatoes, and crumbled feta.
  5. Drizzle olive oil and lemon juice over the salad; season with salt and pepper. Mix gently.
  6. Chill for at least 30 minutes before serving for best flavor.
