  • 1 cup dried hibiscus flowers
  • ½ cup elderflower syrup
  • 4 cups water (for steeping)
  • 3 cups chilled sparkling water
  • 1 lemon (sliced)
  • Fresh mint leaves (for garnish)

Instructions

  1. Boil 4 cups of water in a medium saucepan. Add 1 cup of dried hibiscus flowers and steep for 15 minutes until the liquid turns ruby red.
  2. Strain the hibiscus flowers using a fine mesh sieve. Stir in ½ cup of elderflower syrup while the mixture is still warm.
  3. Allow the mixture to cool to room temperature, then refrigerate for at least one hour until chilled.
  4. In glasses filled with ice, mix one part hibiscus-elderflower mixture with three parts chilled sparkling water.
  5. Garnish with lemon slices and fresh mint leaves before serving.
