Shrimp avocado salad is a refreshing summer dish that combines juicy shrimp, creamy avocado, and colorful veggies for a delightful burst of flavor.

  • 1 lb fresh shrimp (peeled and deveined)
  • 2 ripe avocados (diced)
  • 1 cup cherry tomatoes (halved)
  • 1 cup cucumber (diced)
  • 2 tbsp lime juice (freshly squeezed)
  • 2 tbsp olive oil
  • ¼ cup fresh cilantro or parsley (chopped)

Instructions

  1. Cook shrimp in boiling salted water until pink (3-4 minutes). Drain and cool.
  2. Chop avocados, cherry tomatoes, and cucumber into bite-sized pieces.
  3. In a bowl, whisk together lime juice, olive oil, salt, and pepper.
  4. In a large bowl, combine cooled shrimp, chopped veggies, and herbs. Pour dressing over and gently toss.
