Ingredients

  • 1 lb fresh carrots, chopped
  • 1 tbsp fresh ginger, grated
  • 1 medium onion, finely chopped
  • 2 garlic cloves, minced
  • 4 cups low-sodium vegetable broth
  • 1 can (14 oz) coconut milk
  • 1 tbsp olive oil
  • Salt & pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté onions and garlic until translucent (about 5 minutes).
  2. Add chopped carrots and grated ginger; cook for another 5 minutes until softened.
  3. Pour in vegetable broth to cover the vegetables, bring to a boil, then reduce heat and simmer for 20 minutes.
  4. Blend the mixture until smooth using an immersion blender or stand blender.
  5. Stir in coconut milk and let simmer for an additional 5 minutes.
  6. Season with salt and pepper before serving. Garnish with fresh herbs if desired.
