  • 8 oz Andouille sausage (sliced)
  • 1 large onion (diced)
  • 1 green bell pepper (diced)
  • 2 celery stalks (diced)
  • 3 cloves garlic (minced)
  • 14.5 oz canned diced tomatoes
  • 2 teaspoons Cajun seasoning
  • 2 bay leaves
  • 4 cups chicken broth (or water)
  • 1 cup long-grain white rice

Instructions

  1. Soak the dried red kidney beans in water overnight.
  2. In a large pot, heat olive oil over medium heat. Sauté the diced onion, green bell pepper, celery, and minced garlic until tender.
  3. Add sliced Andouille sausage to the pot and cook until browned.
  4. Stir in the diced tomatoes, Cajun seasoning, and bay leaves; cook for 5 minutes.
  5. Add soaked beans and chicken broth to cover by about two inches. Bring to a boil, then reduce heat and simmer for about one hour until beans are tender.
  6. Cook rice according to package instructions separately. Serve red beans over rice.
