  • 34 lbs boneless pork shoulder
  • 1 large onion, chopped
  • 4 garlic cloves, minced
  • 1 cup low-sodium chicken broth
  • 3 carrots, sliced
  • 2 cups Yukon Gold potatoes, diced
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp dried thyme

Instructions

  1. Chop the onion and mince the garlic.
  2. Sear the pork roast in a skillet over medium-high heat until golden brown on all sides (about 3-4 minutes per side).
  3. In the crockpot, layer half of the onions and garlic at the bottom. Place the seared pork roast on top and cover with remaining onions and garlic.
  4. Add carrots and potatoes around the roast.
  5. Pour in chicken broth until nearly covering everything.
  6. Season with salt, pepper, and thyme. Cover and cook on low for 6-8 hours or high for 3-4 hours until tender.
