  • 9 lasagna noodles (traditional or whole wheat)
  • 1 cup ricotta cheese
  • 1 medium zucchini, thinly sliced
  • 2 cups fresh spinach
  • 1 cup bell peppers (mixed colors), chopped
  • Zest of 1 lemon
  • ½ cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 1 cup cream or milk
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C) and lightly spray a baking dish with nonstick cooking spray.
  2. In a skillet over medium heat, sauté zucchini, bell peppers, and spinach in olive oil for about five minutes until slightly softened.
  3. In a mixing bowl, combine ricotta cheese with lemon zest, garlic powder, salt, and pepper.
  4. Layer the baking dish: spread a thin layer of cream or milk sauce at the bottom, followed by lasagna noodles, half the ricotta mixture, half the sautéed vegetables, and sprinkle with Parmesan cheese. Repeat layers.
  5. Top with another layer of noodles and remaining cream or milk sauce followed by Parmesan.
  6. Cover with foil and bake for 30 minutes. Remove foil and bake for an additional 10 minutes until golden brown.
  7. Allow to cool slightly before serving.
