  • 1 lb ground pork
  • 1 cup fresh breadcrumbs
  • 1/2 cup heavy cream
  • 4 tbsp roasted bone marrow
  • 4 tbsp lingonberry jam
  • 1 tsp onion powder
  • 1/4 tsp nutmeg
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a large bowl, combine ground beef, ground pork, breadcrumbs, heavy cream, onion powder, nutmeg, salt, and pepper; mix until just combined.
  3. Shape mixture into golf ball-sized meatballs and place on a parchment-lined baking sheet.
  4. Bake for 20 minutes or until golden brown and cooked through.
  5. For gravy, mix roasted bone marrow with broth and lingonberry jam in a saucepan over medium heat until smooth.
  6. Serve meatballs drizzled with gravy and additional lingonberry jam on the side.
