  • 1 lb lean ground turkey
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 tsp Italian seasoning
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 large egg
  • 2 cups marinara sauce
  • 4 sub rolls
  • 1 cup shredded mozzarella cheese

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine ground turkey, breadcrumbs, Parmesan cheese, Italian seasoning, salt, pepper, and egg. Mix until well combined.
  3. Shape the mixture into golf-ball-sized meatballs (about two tablespoons each) and place them on the prepared baking sheet.
  4. Bake for 20-25 minutes until meatballs are golden brown and cooked through.
  5. While baking, heat marinara sauce in a saucepan over medium heat until warmed.
  6. Slice open sub rolls and place three or four meatballs inside each roll. Spoon marinara sauce generously over the meatballs and top with mozzarella cheese.
  7. Return subs to the oven for about five minutes until the cheese melts.
  8. Serve hot with extra marinara sauce on the side.
