  • 1 cup grated zucchini (excess moisture squeezed out)
  • 1/2 cup breadcrumbs (plain or seasoned)
  • 1 large egg
  • 1/2 cup finely chopped onion
  • 2 cloves garlic (minced)
  • 1/4 cup ketchup (plus more for topping)
  • Salt and pepper to taste

Instructions

  1. 1. Preheat your oven to 350°F (175°C). In a large bowl, combine ground turkey, grated zucchini, breadcrumbs, onion, garlic, egg, and half of the ketchup. Season with salt and pepper; mix until just combined.
  2. 2. Shape the mixture into a loaf in a baking dish or loaf pan. Spread remaining ketchup on top.
  3. 3. Bake for about 60 minutes or until the internal temperature reaches 165°F (75°C). Let rest for 10 minutes before slicing.
