  • 2 medium sweet potatoes (about 2 cups, cubed)
  • 1 bunch fresh asparagus (approximately 1 lb, trimmed)
  • 3 tbsp extra virgin olive oil
  • 3 cloves garlic (minced)
  • 1 tbsp lemon juice
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a bowl, toss cubed sweet potatoes with 2 tablespoons of olive oil, salt, and pepper. Spread on a baking sheet lined with parchment paper.
  3. Roast for 20 minutes until golden brown and fork-tender, flipping halfway through.
  4. Meanwhile, prepare the asparagus by trimming the ends. After the sweet potatoes have roasted for 20 minutes, add asparagus on top, drizzle with remaining olive oil, and sprinkle minced garlic over everything.
  5. Roast for an additional 10-15 minutes until asparagus is tender but still bright green.
  6. Remove from the oven and drizzle with lemon juice before serving.
