  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 2 tablespoons Cajun seasoning
  • 12 ounces fettuccine pasta
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 2 tablespoons butter
  • 2 cloves fresh garlic, minced
  • 1 cup low-sodium chicken broth

Instructions

  1. Cook the fettuccine according to package instructions until al dente; drain and set aside.
  2. Generously season both sides of the chicken breasts with Cajun seasoning.
  3. In a large skillet over medium heat, melt the butter and cook the seasoned chicken for 6-7 minutes on each side until golden brown and cooked through. Remove from skillet and let rest.
  4. In the same skillet, add minced garlic and sauté for one minute until fragrant. Stir in heavy cream and chicken broth while scraping up any bits from the pan.
  5. Gradually whisk in grated Parmesan cheese until melted and smooth. Adjust seasoning as desired.
  6. Slice the cooked chicken and return it to the skillet along with drained fettuccine; toss to coat in the sauce.
